Crusty bread rolls

Everyone knows that the best smell in the world is baking bread, and bread still warm from the oven is delicious! I love making bread, I love the whole process, kneading, shaping, baking. While you can use a food mixer for this I am going to be doing the process by hand. Delicious with soups, for sandwiches, just with butter is amazing too!

Ingredients

250g strong bread flour – I am using white, but you can use wholegrain or wholemeal.

1 x 7g sachet instant dried yeast

1/2 tsp salt

1 tsp melted butter or oil

150ml water

Method

Combine all the ingredients in a large bowl, and work together (make sure the salt and yeast do not touch when adding to the flour, this kills the yeast and you won’t get a fully risen result)

Once combined turn out onto a work surface (don’t use flour as this will alter the mix) and knead for about 10 mins – kneading is to stretch the gluten so really stretch the dough and fold back when kneading.

 

 

At this point the mix is smooth and springy to touch.

Pop the dough back into the bowl, cover – either with a tea towel or cling film, and leave to rise, (this does not have to be a warm environment room temperature is fine) for about 2 hours.

Once at least doubled in size, remove the dough and ‘knock back’ (hit and fold dough several times)

 

 

Cut into 6 equal pieces, hape each piece into balls and pop onto a floured baking sheet, cover with some oiled cling film and leave to rise again for an hour.

 

 

Once risen, heat up your oven to the maximum setting and place a roasting tray in the bottom.

Once the oven has heated, sprinkle the rolls with flour

Put the rolls in the oven with 1/2 litre of water into the roasting tray. Turn the oven down to 180 fan and bake for 20 mins.

You will know when they’re done by tapping the bottom on one of the rolls, it should sound hollow, if not put back into the oven for 5 mins and check again.

These are delicious hot or cold, I make a batch and freeze some for another day, just defrost for 2 hours and heat for 10 mins in the oven – they’ll come out like they’re fresh baked!!
