Chocolate brownies

Not good for a new year diet, but we all need to treat ourselves once in a while! I love these they are and instant lift to any mood, and great for cold winter nights, delicious served warm with a hot chocolate, but really good cold in a lunch box for an afternoon treat when work is getting you down!

Ingredients

150g milk chocolate – you can use dark chocolate or even white chocolate but I love the sweetness milk chocolate gives

150g butter

2 eggs

1 tsp (teaspoon) vanilla paste – you can use essence, extract, seeds from a pod or none at all it’s not essential.

1 tbs (tablespoon) black coffee made up like you would drink it

100g sugar

125g self raising flour

25g Cocoa

1/2 tsp salt

1 tsp baking powder

75g chopped nuts – can be any that you like or none at all if you don’t like them

50g chopped chocolate

Method

Melt the chocolate and butter in a bowl over simmering water (don’t let the bowl touch the water and don’t let it get too hot) stir occasionally

Let the mixture cool slightly and whisk in the eggs, vanilla, sugar and coffee

Sift the flour, cocoa powder, baking powder and salt into the mixture and before stirring add the nuts and the chocolate (this will coat the nuts and chocolate in flour and prevent them from sinking in the mix)

Fold the ingredients together until just combined (don’t over mix as you will lose texture in you brownies)

Put your mix into a baking tray lined with greased baking paper.

Pop your brownies into the oven 160 fan for about 25 mins. The brownies should still feel soft in the centre.

Let them cool in the tin. Once cool slice them into squares and serve.

Try them, you won’t regret it, unless like me you’ll end up eating them all because they’re so delicious! To warm a square up put it in the microwave for 30 seconds and serve with cream or ice cream for a delicious and quick dessert that anyone would be impressed by!!
