Bread and butter pudding

I love this, and what better way of using up stale bread, the results really are better with stale bread but you can use fresh if you haven’t got any. Delicious warm for dessert, you can even make chocolate flavoured one with chocolate spread instead of butter and chocolate custard.

Ingredients

3 slices of bread – I am using white bread but you can use whatever you’ve got, seeded bread will add a nice texture.

25g butter slightly softened

50g dried fruit – I am using mixed fruit but use whatever you like, cranberries work very well

1 egg

50ml double cream

100ml milk

50g caster sugar

zest of 1 lemon or orange

grated nutmeg

1 tsp (teaspoon) Demerara sugar

Method

Butter the bread, you can cut off the crusts but I prefer to leave them on. Cut into triangles and arrange into an oven proof dish

Sprinkle over the mixed fruit and lemon zest

In a bowl whisk together the milk, eggs, cream and sugar, pour over the bread and leave to soak up of about an hour

Push down every so often to allow the custard to soak up into the bread

Sprinkle over the nutmeg and Demerara sugar and pop into the oven for 30 mins at 160 fan

Such a deliciously simply dessert and great for mid week or something special for a Sunday, who can resist!!
