Malt loaf

Emma wanted to see this one so here we go. What an amazing breakfast, it’ll keep you going and it’s delicious as a snack with butter and a cup of tea! It’s just like you remember, sticky, malty and best of all homemade! I hope you enjoy this recipe it’s been years since I made it and I think you’ll agree well worth digging out of the archives.

Ingredients

75ml stewed black tea

100g malt extract – I had real difficulty getting this but found some barley malt extract in a health food shop

150g dried fruit

1 egg

100g dark brown sugar

125g plain flour

1/2 tsp (teaspoon) baking powder

1/2 tsp bicarbonate of soda

Method

In a bowl put in the hot tea, malt extract, mixed fruit and sugar and stir

Leave to steep for about an hour, it really doesn’t matter too much but will make the fruit more plump and juicy

Mix in the egg then fold in the flour,

Add the baking powder and bicarb and stir in quickly

 

Pour into a well greased and lined tin and bake for 50mins 130 fan

 

It should be firm and sticky, let it cool completely

once cool wrap up well and leave to mature for 3-5 days.

Serves 10

Cals – 160, fat – 0.8, carbs – 45.6, protein – 4.3
