This is another veggie idea for Sheree. I love these vegetable burgers, they are just like the ones I had when I was a child, and weirdly I loved them then too, dressed up in a bun they are delicious with chips and a salad, I know most people would prefer a beef burger but I’d be hard pressed to choose.
1 medium potato mashed
1 small carrot chopped into small cubes
1/4 onion finely chopped
salt and pepper to taste
1 egg beaten
50g breadcrumb (I blitz up any bread ends or stale bread and keep a bag in the freezer)
Let the mash cool slightly then mix up with your veg and add salt and pepper to taste.
Shape into 2 patty shapes about the same size
First dip into the flour to cover and pat off the excess
Next dip into the egg and shake off the excess
Finally dip into breadcrumbs and make sure they are evenly coated.
Pop them into the fridge to set for about 30mins to an hour
Put onto a baking sheet and drizzle with oil, Bake in the oven 180 fan for 25 mins turning halfway through
