Indulgent chocolate cake

I was asked to make a chocolate birthday cake for a friend, and this recipe is always a winner, so I thought I would share it with you, rich indulgent and delicious! You might be surprised at the lack of sugar in this recipe, but it really doesn’t need it with the amount of chocolate going in.

Ingredients

For the cake

200g chocolate – I use a 50/50 mix of dark and milk but you can use whatever you like

200g butter

2 eggs

75g ground almonds

75g self raising flour

25g cocoa powder

1 tsp salt

1 tsp baking powder

For the Ganache

100g dark chocolate

175g milk chocolate

100g white chocolate

300g double cream

Method

Start by gently melting the butter and chocolate together in a bain  Marie (in a bowl over a pan of simmering water)

Let the mix cool slightly and whisk in the eggs

 

In a separate bowl mix together the dry ingredients – almonds, flour, salt, baking powder, and cocoa

Add the dry mix into the wet and stir gently until incorporated

 

Thoroughly grease a cake tin a pour in your mix

 

Put into a preheated oven 160 fan for 30 mins, to check if the cake is done, insert a skewer and it should come out clean ( pop it back in for 5 mins if it needs it

Once done, let cool in the tin for 10 mins, then turn out, let it cool completely

Next make the first ganache, heat 150g cream to just below the boil, add 75g of the milk chocolate, stir until melted completely

 

Then pour all over the cake, allow to set

Next make the other 3 ganaches, Add the different chocolates into the different bowls, and heat the rest of the cream, once nearly boiling divide into the 3 bowls

Stir each until the chocolate has melted (you may need to gently reheat if not melting with the cream) and leave to cool, once cool whisk to a soft truffle consistency

Put a mix of the three different flavours into a piping bag and pipe into flower shapes onto the cake

 

Beautiful, and really easy, I have made some leaf shapes by painting some melted chocolate onto bay leaves and leaving to set, peel off and use for decoration. It’s a real crowd pleaser and looks far more complicated than it is.
