Crispy pancakes

So it’s pancake day and although I’m sure you have none left it’s worth making a couple of extra ones for this recipe. This is really retro, and as a kid these were one of my favourite meals, they are really hard to find these days so I gave it a go and came up with this recipe, which I think you’ll agree are even better than their frozen counterparts!

Ingredients

4 x pancakes – see my pancakes recipe

150g bolognese sauce – see my spaghetti bolognese recipe

50g mozzarella in 4 equal slices

1 egg beaten

50g plain flour

100g breadcrumbs – I blitz up old bread and keep a bag in the freezer

Method

Take a pancake and on one half place a large spoonful of bolognese

Place a slice of mozzarella on top of the bolognese

Brush some egg around the edge of the pancake; fold in half and press the edges together firmly

Carefully dip the pancake into the flour – taking care not to split the pancake

Next dip into the egg

Now cover in breadcrumbs

Repeat for all the pancakes

Place on an oiled baking tray, and drizzle with oil, bake for 20mins in the oven at 180 fan
