Potato nests

I have been doing a lot of research into wartime cooking and rationing, so I adapted this recipe I found, as it looked amazing! These are delicious for breakfast or tea, mashed potato nests with an egg baked in the middle, kinda like a scotch egg but without the meat. They are really easy and a different take on egg and chips.

Ingredients

1 x large potato cut into quarters – don’t worry about peeling, but you can if you want.

2 x rashers of bacon sliced

1/4 onion diced

1 tsp (teaspoon) mustard powder

1 tbs (tablespoon) Parmesan

2 eggs

30g cheddar cheese

Method

Start by boiling the potato and then mashing when cooked

Meanwhile fry off the onion and bacon, on a medium heat, for 6 mins until brownedOnce the potato is mashed, mix in the bacon, onion, mustard and Parmesan On an oiled baking tray make the potato nests, making sure there is a good covering on the bottomDrop an egg into each nest and sprinkle on the cheeseBake in a preheated oven 160 fan for 30 minsReally nice comfort food, delicious and really easy.
