Victoria sandwich

What a classic! And loved by everyone! It had to go on here sometime I couldn’t put it off any longer. Make this and settle down with a cup of tea and enjoy you won’t be able to stop yourself!


200g butter – softened at room temperature

200g caster sugar

4 eggs – at room temperature

200g self raising flour – sifted

For the filling

4 tbs (tablespoons) jam of your choice

200ml double cream whipped


In a large bowl put in your butter, sugar, eggs and flour

Beat until all combined – but be careful not to over beat as this will make your cake heavy

Grease 4 sandwich tins well and divide your mix evenly between the 4

Bake in a preheated oven 160 fan for 25 mins. Test if your cakes are done by pressing gently down in the centre and the cake should spring back

Once cooked remove from the tin and leave to cool completely

Once cool spread over the jam on two of the sponges on the flat side, and the cream on the others, sandwich together

Place on a plate and dust with icing sugar
