Chinese style pig cheeks with noodles

I love anything with Chinese flavourings so I thought I would add a little Chinese flavour to this cheap but tasty cut of meat. Try this recipe, it’s budget friendly and so easy to prepare, and although the marinade is better left over night it’s not essential, so it can be something you throw together and leave to cook while doing other things.

For the marinade

1 tbs (tablespoon) oil

2 tbs honey

1 tbs rice vinegar

2 tbs soy sauce

2 tbs red wine

1 tbs Chinese five spice

3 cloves garlic grated

1/2 red chilli grated

1 x 2.5 cm piece grated ginger

2 pig cheeks

100ml water

For the noodles

1/2 carrot finely sliced

1 spring onion sliced

1/2 red chilli

2 cloves garlic

150g straight to wok noodles

Small bunch chopped coriander

Start by mixing all the marinade ingredients together except the water in a casserole pan

Add the pig cheeks and coat thoroughly with the marinade turning every couple of hours (leave over night if you can)

Preheat the oven to 140 fan and remove the pig cheeks to seal in a pan on a high heat – make sure you seal all round the meat for a min or two on each side

Pop back in with the marinade, add the water and put in the oven for 2 hours basting every 30 mins

When cooked remove the cheeks and leave to rest while you cook the noodles

Start by frying the carrots, the green of the spring onion and the chilli in a little coconut oil (it can be normal oil) on a medium high heat, for 2 mins

Add the garlic and cook for a further 30 secs

Add the noodles and cook for a further minute

Add the marinade to the noodles and stir, leave on the heat while you pull apart the pork with forks

Now you can serve – create a bed of noodles place on your pork and sprinkle over the remaining onion and coriander
