Coconut macaroons

These are so easy and quick to whip up, so if you’re in the mood for something sweet they really hit the spot. Best of all the mix is fatless (although not sugarless) so almost guilt free snacking – practically a health food!


1 egg white

50g caster sugar

50g desiccated coconut

1/2 tsp vanilla extract

1 tsp cornflour

50g milk chocolate


Start by whipping up your egg white until stiff peaks form

Gradually whip in the sugar bit by bit until stiff and glossy

Add in the cornflour, vanilla and coconut

Carefully fold in until just combined

On a lined baking tray put on a teaspoon of the mix and smooth and flatten out

Repeat until you have 8 macaroons

Bake in a preheated oven 160 fan for 12 mins

Once cooked immediately remove from the paper to prevent sticking and pop onto a cooling rack – they will firm up as they cool

When cool, melt chocolate in a bowl over simmering water, and coat the bottoms of the macaroons, leave to harden

When the chocolate is set turn over and drizzle the tops with more melted chocolate.
