I know avocados are becoming somewhat cliched, but no one can argue that with tacos or tortilla chips guacamole is the champion of dips! This is a simple recipe but my all time favourite and once you try it you’ll see why.


1 ripe avocado

Juice 1/2 lemon

1 spring onion roughly chopped

1 clove garlic crushed

1 tbs (tablespoon) chopped coriander

1 tomato quartered and deseeded

1/2 tsp salt

1/2 tsp cayenne

1/2 tsp paprika


Start by blitzing the garlic, coriander, spring onion, and tomato until finely chopped but not a paste

Peel and deseed the avocado Add the lemon and mash with a fork

Add the salt cayenne and paprika, and the vegetable mixture. Stir well

Pop into your serving dish and garnish with a sprig of parsley
