This is an easy and delicious dessert, you can impress friends and family with this one for very little effort. It’s light, creamy and sweet just what you want after a good meal, and you can make whatever flavour you like just substitute the strawberry for another flavour!
300g strawberries roughly chopped
50g caster sugar
1 egg white
150ml double cream
Start by blitzing the strawberries well, then pass through a sieve to remove all the seeds
Add the sugar to the purée and mix well – until all the sugar has dissolved
Whisk the egg white to stiff peaks with a pinch of salt to stabilise the white
Whisk the cream lightly to soft peaks
Add the purée and fold in
Add the egg whites and and carefully fold in
Pour the mix into the serving dishes and pop into the fridge to set for a couple of hours
Enjoy with shortbread biscuits!
