Battered Halloumi and Wedges

A kind of vegetarian take on fish and chips, and who doesn’t love Halloumi so it’s a win for the meat eaters as well! I prefer making wedges over chips as they tend to turn out better for me, as I don’t have a deep fat fryer. They taste great and are crunchy on the outside and fluffy on the inside.

Ingredients

For the wedges

3 medium potatoes

A good pinch of salt and pepper

1 tbs oil

For the Halloumi

1 x 225g pack Halloumi cut into strips

75g self raising flour

1 tsp baking powder

1 tsp mustard powder

125ml milk

100ml oil for frying

Method

Start by scrubbing the potatoes, stab each potato a couple of time to let out steam. Pop them into the microwave for 3 mins per potato, turning halfway through cooking

While they’re cooking make up your batter, in a large bowl put in the dry ingredients and make a well in the centre

Add most of the milk and starting from the centre slowly incorporate the flour – add more mixture if you need to, to make a batter with the consistency of double cream. Allow to stand for around 20-30 mins

The potatoes should now be cooked, cut each potato into 6 wedges

Season with salt and pepper and allow to cool completely

Preheat the oven with a generously oiled baking tray to 180 fan and allow the oil to get hot – this is really important for crispy wedges

Add your wedges and cook for 20 mins, turning halfway through cooking

Meanwhile start on the Halloumi. Heat some oil about 2 cm deep in a large frying pan or wok on a low to medium heat (if you drip some batter in it should start to bubble straight away)

Dry off the Halloumi on kitchen paper and coat in flour

Coat the Halloumi slices in the batter and carefully drop into the hot fat (only cook a couple at a time otherwise the oil will cool down too much)

After a minute turn over and cook the other side

Pop into the oven on the tray with the wedges, to stay warm and crisp while you finish the batch

Once the wedges have had 20 mins you can serve

Serve with a salad and some coleslaw. Delicious!
