These little treasures are light, fluffy, delicious and so quick to whip up! If you’re hankering for some cake make these any you can be enjoying them in half an hour!!


For the cakes –

100g butter softened

100g caster sugar

2 eggs

1 tsp vanilla extract

100g self raising flour

1 tsp baking powder

For the icing

75g butter softened

150g icing sugar

1 tsp flavouring of your choice

Food colouring of your choice


Start by creaming together the butter and sugar until light and fluffy

Add the eggs one at a time whisking briefly with each addition

Add the flour, baking powder and flavouring and fold in, using a metal spoon until just combined

Pop some cupcake cases into a muffin tin and add a spoon of mix into each one (it doesn’t have to be perfect!)

Bake in a preheated oven 160 fan for approx 20 mins (it depends on the oven)

When cooked they should spring back when lightly pressed, and a skewer should come out clean when inserted

Leave to cool. Meanwhile make the butter icing. Whisk the butter and icing sugar until really creamy looking.

Add any colour and flavour you want and mix well. To create the marble colour effect I painted some food colouring in stripes inside the piping bag with a piping nozzle, fill with butter icing

When the cakes are cool, pipe on in any design you like
